Roast Carrots, Potatoes & Onions



 

INGREDIENTS :


°2 pounds carrots

°6 potatoes

°1 whole sweet onion

°3 cloves of garlic

°6 tsp olive oil

°½ t dried thyme

°½ t dried parsley

°Salt & pepper

DIRECTIONS :


Preheat oven to 475ºF. Peeled carrots, cutting them to pieces. Cut the potatoes into bite-size pieces, leaving the skin on. Cut the onion into eighths. Mince the garlic.Combine carrots, potatoes and onion in a large bowl. Drizzle the vegetables with olive oil, add the garlic, thyme, parsley, salt (to taste) and pepper (to taste). Toss to vegetables are coat with olive oil & seasoning. Place on a cookie sheet in a single layer and cover with foil.

Roast for 45 minutes. Remove foil and continue baking for another 30 minutes or until golden brown, stirring every 10 min.
