Carb-Friendly Bacon Cheddar Mini Cheese Balls
These bite-sized cheese balls are a low-carb snack or appetizer packed with smoky bacon, sharp cheddar, and savory herbs. They’re easy to make and perfect for parties, meal prep, or whenever you want a keto-friendly treat!
Ingredients :
8 oz cream cheese, softened
1 cup shredded sharp cheddar cheese
1/2 cup cooked and crumbled bacon
2 tbsp fresh chives, finely chopped (plus extra for garnish)
1 tsp garlic powder
1/2 tsp smoked paprika (optional, for extra flavor)
Salt and pepper, to taste
1/2 cup chopped pecans or crushed pork rinds (optional, for rolling)
Directions :
1. Prepare the cheese mixture :
In a mixing bowl, combine the softened cream cheese, shredded cheddar, half of the crumbled bacon, chives, garlic powder, smoked paprika, salt, and pepper. Mix until well combined.
2. Form the cheese balls :
Using a small scoop or spoon, portion the mixture into bite-sized balls (about 1–1.5 inches in diameter). Roll them gently between your palms to form smooth spheres.
3. Add the coating :
In a shallow dish, mix the remaining crumbled bacon with chopped pecans or crushed pork rinds (if using). Roll each cheese ball in the coating mixture until evenly covered.
4. Chill :
Place the coated cheese balls on a parchment-lined tray or plate and refrigerate for at least 30 minutes to firm up.
