Lamb Chops with Lobster-Potato Mash and Asparagus

 


Ingredients :


• 4 lamb chops

• 1 lb (450g) potatoes, peeled and cubed

• 1 cup lobster meat, cooked and chopped

• 1 bunch asparagus, trimmed

• 4 tbsp butter

• 1/2 cup cream

• Salt and pepper to taste

• 2 tbsp olive oil

• 2 cloves garlic, minced

• Fresh herbs (such as rosemary and thyme) for garnish

Directions :


Prepare the Lobster Mash:

- Boil the potatoes until tender, about 15 minutes. Drain and return to the pot.

 - Add butter, cream, and chopped lobster meat to the potatoes. Mash until smooth. Season with salt and pepper to taste.

Cook the Asparagus:

- Heat a skillet over medium heat, add 1 tbsp olive oil and the trimmed asparagus. Cook for 3-4 minutes, until vibrant and slightly tender. Season with salt and pepper.

Cook the Lamb Chops:

- Season lamb chops with salt, pepper, and minced garlic.

- Heat remaining olive oil in a skillet over medium-high heat. Add lamb chops and cook for about 3-4 minutes per side for medium-rare.

Plate and Garnish:

- Serve the lamb chops over a bed of lobster mash, alongside the asparagus. Garnish with fresh herbs.
