INGREDIENTS:
•2 C. shredded mozzarella cheese (shred your own, packaged shredded
•cheese will not have the same outcome)
•2 large eggs
•1/2 tsp. italian seasoning
•1/2 tsp. dried basil
DIRECTIONS:
In a food processor add 1 1/2 C. of the cheese, the eggs and italian seasoning (I found the food processor worked better than just using a spoon). Pulse this a few times until everything is blended and combined. Line a 9" round cake pan with parchment paper, place another piece going the opposite direction (this makes it easier to lift out of the pan. Spray the parchment paper with a little cooking spray (my first batch stuck so I sprayed my second try and it worked well). Pour the batter into the pan and spread it out evenly to cover the bottom. Bake this in a 350 degree oven for 20 minutes. Remove and let cool slightly while you raise the oven temp. to 425 degrees. Place a cooling rack (one large enough to hold the crust) on a baking sheet. Lift out the crust and remove the parchment paper from underneath and place it on the cooling rack. Top the crust with the remaining cheese and the basil. Return to the oven for 5-6 minutes till cheese has melted and it has a little color on top.
