Zucchini with Oatmeal

Ingredients :


1 cup rolled oats

1 medium zucchini, grated

2 cups water or milk

Salt and pepper to taste

1/2 teaspoon garlic powder

1/4 cup grated Parmesan cheese (optional)

A handful of spinach or other greens (optional)

Olive oil or butter for serving

Directions :


1. In a pot, bring the water or milk to a boil.

2. Add the rolled oats and reduce the heat to a simmer.
