Ingredients :
For the Chicken:
1 lb boneless, skinless chicken breasts , cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Creamy Garlic Sauce:
1/2 cup mayonnaise
2 tablespoons sour cream
2 cloves garlic , minced
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon salt
Fresh parsley , chopped (optional, for garnish)
Directions :
1️⃣. Marinate the Chicken
In a large mixing bowl, combine the olive oil, paprika, garlic powder, salt, and black pepper. Add the chicken cubes and toss until evenly coated. Let the chicken marinate for at least 15 minutes at room temperature or up to 2 hours in the refrigerator for enhanced flavor.
2️⃣. Prepare the Sauce
While the chicken marinates, whisk together the mayonnaise, sour cream, minced garlic, lemon juice, Dijon mustard, and salt in a small bowl. Taste and adjust seasoning if needed. Set aside.
Pro Tip: For extra garlic flavor, let the sauce rest for 10–15 minutes before serving.
3️⃣. Grill the Chicken
Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated chicken cubes in a single layer. Cook for about 3–4 minutes per side , or until the chicken is cooked through and has nice grill marks. Avoid overcrowding the pan to ensure even cooking.
Alternatively, you can thread the chicken onto skewers for a fun presentation and grill them the same way.
4️⃣. Serve with Sauce
Transfer the grilled chicken bites to a serving plate or platter. Drizzle generously with the creamy garlic sauce or serve it on the side for dipping. Garnish with fresh parsley if desired.
Tips for Success :
Don’t Overcook the Chicken : Cooking the chicken just until it’s tender and no longer pink ensures maximum juiciness.
Customize the Spice Level : Add red pepper flakes to the marinade or sauce for a spicy kick.
Make It Ahead : Prepare the sauce ahead of time and store it in the fridge for up to 3 days.
Experiment with Sides : Pair the chicken bites with grilled vegetables, quinoa salad, or crusty bread for a complete meal.
