Cheesy Stuffed Meatloaf Bites make snack time extra exciting with gooey cheese tucked in every bite. These mini meatloaves are quick to prepare and turn out perfectly moist with a golden glaze on top. They are one of my favorite picks for game nights or whenever I need a crowd-pleasing dish that even picky eaters cannot resist.
Ingredients :
• 1 lb ground beef
• 1/2 cup breadcrumbs
• 1/4 cup milk
• 1 large egg
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1 tsp salt
• 1/2 tsp black pepper
• 1 tsp Worcestershire sauce
• 1/2 cup ketchup, divided
• 1 tbsp mustard
• 3–4 oz cheddar or mozzarella cheese, cubed
• Fresh parsley, chopped (optional for garnish)
Directions :
1. Set the oven to 375°F (190°C). Grease a mini muffin tin.
2. In a large bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, Worcestershire sauce, 1/4 cup ketchup, and mustard until evenly combined.
3. Scoop approximately 2 tablespoons of the meat mixture, flatten it, place a cheese cube in the center, and roll into a ball. Place each ball into the greased muffin tin.
4. Mix the remaining 1/4 cup ketchup with mustard. Spoon a small amount onto the top of each meatball bite.
5. Bake the meatloaf bites for 18–22 minutes, or until browned and cooked through with an internal temperature of 160°F (71°C).
6. Let the bites cool for 5 minutes, garnish with chopped parsley if desired, and serve warm.
