For the Salad

2 pounds Yukon Gold potatoes
1 small onion, finely diced
6 slices turkey bacon (or traditional bacon if preferred)
2 tablespoons chopped parsley

For the Dressing

1/3 cup apple cider vinegar
2 tablespoons Dijon mustard
1 tablespoon yellow mustard
1 tablespoon sugar
1/2 cup chicken broth
2 tablespoons olive oil (if needed)
1 teaspoon salt
1/2 teaspoon black pepper

Optional:

1 teaspoon celery seed
1 teaspoon garlic powder
Chopped chives

Directions :


Step 1: Cook the Potatoes

Wash the potatoes and place them in salted water. Bring to a boil and cook until fork tender but not falling apart, about 15–20 minutes depending on size.

Drain and allow them to cool slightly before slicing.

Step 2: Cook the Bacon

Cook the turkey bacon until crisp.

Remove and chop into bite-sized pieces.

Step 3: Cook the Onions

Add diced onions to the skillet and sauté until soft and translucent.
