Ingredients :

4 slices of thick-cut bread (sourdough or whole wheat recommended)

4 large eggs

4 slices of bacon

4 slices of cheese (cheddar, Swiss, or your favorite melting cheese)

2 tablespoons butter

Salt and pepper to taste

Optional toppings: avocado slices, sliced tomatoes, spinach leaves

Directions :

1. Cook the bacon: In a skillet over medium heat, cook the bacon until it’s crispy and golden brown. Remove from the skillet and drain on paper towels.

2. Toast the bread: In the same skillet or a toaster, toast the bread slices until they are golden and crispy. Spread a thin layer of butter on one side of each toasted slice.

3. Fry the eggs: In the same skillet, melt the remaining butter over medium heat. Crack the eggs into the skillet and season with salt and pepper. Cook until the whites are set but the yolks are still runny, about 2-3 minutes.

4. Assemble the sandwiches: Place a slice of cheese on two of the toasted bread slices. Divide the cooked bacon evenly between the two slices. Carefully slide a fried egg on top of the bacon on each sandwich. If desired, add any optional toppings.

5. Top with the remaining bread slices, buttered side facing down, to create two sandwiches.

6. Serve hot: Slice the sandwiches in half diagonally and serve immediately while the cheese is still melty and the eggs are warm.
